Hi! This is Russell with Phase2HcgRecipes.com and today I’m going to be cooking Sautéed Herbed Tilapia with Asparagus and Cherry Tomatoes.
So let me show you what I’m working with today.
Today I’m going to be using lemon juice, onion, asparagus, garlic, cherry tomatoes, fresh parsley, a little over 3.5 ounces of tilapia, granulated garlic, salt, pepper, and dill.
So how I’m going to prepare this is that I’m going to mince up the onion and garlic. I’m going to rub that over the tilapia, as well as the dill, salt and pepper, and lemon juice. Let that sit for just a little bit so that the flavors can incorporate into the meat of the fish. Then I’m going to blanch the asparagus.
When I start cooking I’m going to sauté the tilapia in a frying pan with a little bit of water and lemon juice. When that’s done cooking, I’m going remove the fish then put the asparagus with more garlic and onion into the frying pan so that way it will absorb some of those flavors. Then I’m going to add the tomatoes at the end because they cook pretty quickly.
So let me show you how we’re going to do this.
Alright, now that I have all my ingredients prepped, I’m ready to start cooking. So what I’m going to do is that I’m going to first get a pan of water boiling for my asparagus. And while that’s heating up I’m going to season the fish. After the water is boiling I’m going to blanch the asparagus. “Blanch” is just a fancy term for saying that I’m going to half-way cook it in boiling water.
So once that’s done blanching I’m actually going to cool it off and set it aside. Then I’m going to get my pan hot for the fish. After the pan is hot I’m going to cook the fish. Once that is done I’m going to set it aside, add the asparagus, onion and garlic, and let that cook for a bit. Before it’s done I’m going to add the cherry tomatoes at the end, then I will be ready to plate up.
